Introduction

Ingredients

    14 med. potatos peeled and diced
    3 cans chicken broth 98% fat free
    1 can fat free evaporated milk
    2 tbsp. light country crock spread
    8 slices of bacon- for garnish
    3/4 cup shredded cheese-for garnish

Directions

Peel, wash, and dice the potatoes. In a large stock pot combine the broth and potatoes and cook on med. heat until soft about 20 min stirring occasionally. Add the milk and butter and let simmer for another 25 min on med heat stirring occasionally. While this is cooking, in a skillet fry the bacon to crisp stage. Drain on a paper towel and pat dry removing as much grease as possible. Let cool 5 min. Crumble. To serve, ladle soup into a bowl. Top with a few bacon crumbs and shredded cheese- I use 1 table spoon of each. Makes 10 1- cup servings
