Ingredients

2 ea Egg Whites
1 Slice Low fat Colby Jack Cheese
1 oz Onions, chopped
1 oz Red Bell Pepper, chopped
2 oz Potatoes, diced (ccoked)
1 slice Low sodium Turkey Bacon
3 oz Cottage Cheese
2 oz Pineapple, Diced
1 ea Wheat Tortilla
Directions
1. Steam off diced potatoes until cooked. Set aside.
2. Cook bacon until done. Set aside.
3. Sweat onions and peppers until onions are transparent and set aside.
4. Cook egg whites in a saute pan and add onions and peppers when eggs are almost done.
5. Scoop egg mixture onto tortilla in a line in the middle of the tortilla, add bacon and cheese and roll up.
6. Lightly heat rolled tortilla in a pan turning frequently to heat contents evenly and to melt the cheese.
7. Slice tortilla on an angle evenly for two slices
8. Mix cottage cheese and pineapples together and serve as a side item.
Serving Size: 1 Wrap with 1/2 cup serving (filling) and 1/2 cup side
