Number of Servings: 4

Ingredients

    2 pnds, boneless, skinless chicken breasts, but into 1-inch cubes
    3 medium onions, quartered
    2 carrots, peeled and cut into 1-inch slices
    2 potatoes, peeled and cut into 1-inch cubes
    28 ounces chicken broth
    1 tsp celery seed
    1 tsp dried thyme leaves
    1/2 tsp black pepper
    8 ounces mushrooms, halved or slices
    1 cup frozen corn
    1 cup frozen peas

Tips

I added more broth than what it called for, as the vegetables soaked up some of the broth as it cooked. If you do, you'll want to add a little more herbs as well.

Cooking time: 7-9 hours


Directions

Add all ingredients except peas. Add those the last 30 minutes
