Ingredients

    1 tsp. sunflower oil
    1 large or 2 small cloves garlic, minced
    1 tsp. minced ginger
    2 medium tomatoes cut in large wedges
    3 heads baby bok choy
    3 cups water
    1 large egg, mixed with fork
    salt and ground pepper to taste

Directions

sautee garlic and ginger in sunflower oil, add in tomatoes, simmer for a couple minutes...do not squish tomatoes, throw in whole washed bok choy, add in water, simmer for 2 mins, once bok choy is soft, drizzle egg over, let simmer until egg is cooked. Pour into bowl and eat.
