Ingredients

    3lbs 90% Lean Ground Sirloin
    3 Large + 1 Small Farm Fresh Eggs
    3/4 Cup Bob's Red Mill Almond Meal
    1 Can Trader Joe's Organic Tomato Paste
    1 1/2 TBSP Minced Garlic
    Vindaloo spices to taste (you can toast your own or use a pre-packaged version)
    2 TBSP Salt
    1/2 TBSP Black Pepper

Directions

Beat eggs with tomato paste, almond meal, vindaloo spices, salt, black pepper and garlic. In a separate container, combine your mixture with your ground beef (with your hands). Make sure you don't have any lumps of spices or almond meal. Using an icecream scoop, broil at 450 degrees for 10-12 minutes, or until done depending on your oven.

Serving Size: Makes approximately 64 meatballs
