If you like pico, and a little heat, you'll love this one. For more heat don't take out the white part inside the jalapeno, or add more. Keeps in the fridge for about 5 days. Ingredients

4 medium tomatoes, diced small
1/2 large red onion, diced
1/2 large green bell pepper, diced
1 jalapeno pepper, diced fine
1/8-1/4 cup lime juice
1/2 -1 bunch fresh cilantro, chopped small
salt to taste
Tips
This is a very versatile recipe, add more of what you like, and less of what you don't. Can also add diced up seeded cucumber to add another texture. I like this over cottage cheese or as a salad or potato topper.
Directions
Mix all ingredients in large bowl. Refrigerate 1 hour, then drain and put in lidded container and keep in refrigerator. May need drained every 1-2 days.
