Introduction

A hearty taco salad! A hearty taco salad!
Number of Servings: 4

Ingredients

    Mixed greens
    1 onion chopped
    1 cup peppers chopped
    1 cup tomatoes chopped
    1 avocado diced
    can of cream corn
    can of chili beans
    1/2 cup Salsa
    4 whole wheat tortillas

Tips

You can add cumin to the dressing or cilantro to the finished salad for more flavor.


Directions

Preheat oven to 350, push tortillas into oven safe bowls. Heat for ten minutes or until crunchy. Take out and allow to cool. Meanwhile chop onions, peppers, tomatoes and avocado. Mix cream corn, beans and salsa in a small saucepan over medium heat until just warm. Put greens in tortillas bowls, top with veggies and put 1/4 of corn/bean dressing on top.

Serving Size: Makes 4 servings
