Ingredients

1 packet Quorn mince
2 cloves garlic
2 lg onions, chopped
2 lg carrots, sliced
half yellow pepper, chopped
2 tins chopped tomatoes
2 tbsp tomato paste
1 tsp smoked paprika
seasoning to taste
6 tbs tahini
juice of half a lemon
1 cup tap water
salt to taste
Sesame seeds for sprinkling - optional
Tips
The sauce will thicken in the oven and form a creamy layer on top of the Quorn mince.
Directions
In an oven-ready pan, soften the onions in olive oil and add minced garlic cloves, peppers and sliced carrots. Cook for 2-3 minutes until softening. Add Quorn mince and tinned tomatoes. Season and add smoked paprika. Cook for about 10 minutes, stirring occasionally.
Meanwhile, make the topping by mixing half a jar of tahini with the juice of half a lemon and a cup of water. Add salt to taste. The mixture will thicken and then loosen, and should end up like a thin cream. Pour it over the Quorn Mince, attempting to cover the whole base with a thin creamy layer. Add a sprinkling of sesame seeds if liked.
Bake in a medium oven for 20 minutes.
