Ingredients

3 7 oz cans of diced green chilis
1-1/2 lbs shredded monterey jack cheese
1 lg can evaporated milk
1 8 oz can El Pato tomato sauce
1 8 oz can regular tomato sauce
4 eggs
3 T flour
Tips
Bacon or ham can be added for additional flavor.
Directions
Pour 1/2 of the chilis in the bottom of a 13x9x2 inch baking dish. Cover with 1/2 the cheese and repeat. Beat egg yoks and add milk, flour, and salt & pepper to taste. Beat egg whites and fold into yolk mixture. Pour entire mixture over chilis and cheese and bake at 325 degrees for 30 minutes. Mix the two cans of tomato sauce in a bowl and pour gently over egg/cheese mixture. Bake another 30 minutes. Serve warm.
