Introduction

Ingredients

    1 1/4 cup rolled oats
    1/4 cup steel cut oats in 3/4 cup water
    1 1/2 cups whole wheat flour
    1/2 cup Stevia In The Raw powder
    1 tsp baking powder
    2/4 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 cup powdered milk
    1/2 cup water
    1 cup unsweetened applesauce
    2 tbsp. canola oil
    1 egg
    1 cup raisins
    1 cup chopped walnuts


Tips

These muffins taste even better the next day!
You can also use low sugar Splenda/brown sugar blend or regular brown sugar if you don't need to watch your sugar intake.


Directions

Preheat oven to 400. Spray 2 6-cup muffin tins or a 12-cup muffin tin with cooking spray. Microwave the steel cut oats in water for 2 minutes. Set aside. Combine all wet ingredients. Microwave steel cut oats 2 more minutes and let cool for 5 minutes. Mix all dry ingredients in a separate bowl and add to wet ingredients. Mix well. Add steel cut oats and blend. Blend in raisins and nuts. Fill each greased muffin cup full as these will not overflow. Bake 18-20 minutes. Makes 16 regular size muffins.
