Ingredients

    1 pita bread whole wheat
    1 ripe bell pepper (NOT GREEN) seeded & quartered
    1 T store bought olive tapenade
    1 oz hummus
    1 c fresh baby spinach
    1 big slice onion
    1 small english-style cucumber sliced lengthwise

Directions

Cut the pita 2-4 pieces that fit your toaster. Toast pita lightly just to warm and open it, or to make it a little crunchy.

Mix the hummus and tapenade then spread on each pita.

Stuff each pita with veggie.
