Ingredients

    Chicken Thigh, 2.25 lb (about 6)
    Raisins, 2/3 cup
    Olive Oil, 4 tbsp
    *Onion (Yellow), 2 sliced thinly
    Cardamom, ground, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    *Basmati brown rice, 1 2/3 cup (remove)

Tips

Can be reheated in a 325F oven.


Directions

Soak rice in water to cover for at least 30 mins.
Caramelize onions in 2 tbsp olive oil, and remove from pot.
Brown chicken thighs and remove from pot. Drain all but a bit of oil.
Add rice, cinnamon and cardamom to pot and toast until dry.
Nestle chicken into the rice and add 2 1/4 cups boiling water.
Lower temp to very low and cook for 30 mins. Remove from heat, take the lid off and place a clean tea towel on top. Replace lid and let sit for 90 mins or until rice is done.
