Ingredients

1 fillet of white fish, such as Basa or Cod
2 fillets of smoked Haddock
35g Prawns
600ml Skimmed Milk
1 Small Onion, quatered
4 Cloves
2 Bay Leaves
100g Butter
50g Plain Flour
Pinch Nutmeg
Small bunch of Parsley, chopped
4 Medium Potatoes, mashed
Directions
Stud each onion quater with a clove and add to the milk with the bay leaves. Poach the fish in a frying pan with the milk. Bring to the boil then reduce heat and simmer for 8 minutes.
Remove the fish and strain the milk into a jug to cool. Flake the fish into large peices in a pie dish and scatter the parsley over the top.
Melt half the butter over a moderate heat, add the flour and cook for 1 minute. Take off the heat and add a little of the cooled poaching milk. Stir until well blended then add a little more milk. Continue this way until you have a smooth sauce. Return to the heat and bring to the boil, stiring continually, until the sauce coats the back of a spoon. Remove from the heat and season with nutmeg, salt and petter. Pour over the fish.
Mash the potatoes with the remaining butter and top the pie. Bake for 30 minutes at 200°C/gas 6
Serve with a side salad or vegetables of your choice.
