Ingredients

    1 Large Head Cauliflower
    2 Large Onions Diced
    1 Cup Baby Bella Mushrooms sliced
    3 Leeks, white parts only - sliced
    6 tsps Bacon Grease, Butter, or other fat for saute
    6 Cups Vegetable Broth
    3 tsps Chicken Base
    2 Packages Pioneer Gluten Free Country Gravy Mix
    1 Clove Garlic Diced

Directions

Melt fat in pan and saute onions, leeks, mushrooms, cauliflower and garlic over medium high heat until they begin to caramelize and soften. Add vegetable broth and bring to a boil. Add chicken base. Lower heat and simmer covered for 20 minutes. Remove cover and reduce liquid by half. Use stick blender to puree until smooth. Combine gravy mix with one cup cold water and add to soup while stirring. Serve warm
