Ingredients

    1 large egg, lightly beaten
    9 tbsp essential everyday egg whites
    2 mashed bananas (6.10 oz)
    1 tsp vanilla extract
    1/4 cup water
    3/4 cup bob's red mill whole wheat pastry flour
    1 scoop whole foods vanilla soy protein powder
    1/4 tsp sea salt
    1 tsp baking soda
    1/2 tsp ground cinnamon
    1/4 cup (30g) chopped walnuts

These freeze well too. After they've cooled on a wire rack, set the rack on a cookie sheet and pop in the freezer for an hour or so. Take them out and quickly portion them into zip baggies for later. You can put them in the toaster and use the defrost setting. I think they're better this way rather than straight out of the waffle iron because they actually get crispy! Mmm.


Directions

Preheat waffle iron. Whisk together the eggs, bananas, vanilla and water. Add dry ingredients and mix. Spray waffle iron with oil. Spoon batter into the waffle iron and cook until it shuts off (~4 minutes). Repeat the last step until you've used up all the batter and you're good to go!

Serving Size: Makes 6 square waffles, 2 per serving.

    I wonder if you can use a different protein powder...I can't have soy. - 1/27/17
