Ingredients

    1 Tbsp of olive oil, extra virgin
    1 onion, diced
    Half of a green pepper, diced
    2 cloves of garlic, minced
    1 cup of kale, chopped
    1 cup of spinach, chopped
    8 eggs
    1/4 cup 2% milk
    1/2 cup of shredded cheese, mexican
    2 tsp onion powder
    2 tsp garlic powder
    1/2 tsp oregano
    1/4 tsp tarragon
    1 tsp salt
    1 tsp pepper

Tips

You can substitute skim milk for the 2% and any kind of cheese would work, I just like the taste of the Mexican kind.


Directions

Add the olive oil to a skillet on med-high heat. Add onion and green pepper to the skillet and saute for about 3-5 mins or till translucent. Add garlic, kale, and spinach and cook till the spinach and kale wilt. Whisk eggs, milk, onion powder, garlic powder, oregano, tarragon, salt, and pepper together till frothy and golden yellow. Pour the egg mixture over the ingredients in the skillet and turn down to med-low and cover pan with lid. Let this cook covered for about 10-12 mins until eggs are set(firm). Remove lid and add add cheese over top of omelet. Replace lid and let cheese melt, about additional minute. Cut into 4 servings and enjoy.
