Ingredients

    3 large eggs
    3 tablespoons lowfat buttermilk
    1 tablespoon unsalted butter
    1 tablespoon fresh chives, finely chopped
    2 thin slices white bread
    3 thin slices American cheese
    salt and pepper to taste

Tips

Substitute chives for any other desired herb or mixture of herbs. Substitute any type of bread for the white bread. Substitute any good melting cheese for the American cheese.


Directions

Melt butter in nonstick skillet over medium-low heat. Meanwhile whisk together eggs, buttermilk, and salt and pepper to taste. Toast bread. Add egg mixture to the pan along with the chives and cook to the desired consistency. Place half of the egg mixture on each slice of toast and top with cheese. Place in microwave for 30 seconds or until the cheese is melted.
