Introduction

This is a remake of Emeril Laggase's Easy Enchilada Sauce This is a remake of Emeril Laggase's Easy Enchilada Sauce
Number of Servings: 12

Ingredients

    3 tbsp Canola Oil
    1 Tbsp White flour
    1 cup chicken broth (Used Pacific Natural for low sodium)
    1 Tbsp Chili Powder
    1.25 cups Meijer Natural's Tomato Puree (instead of paste)
    1 tsp ground Oregano
    1 tsp Tone's Southwest Chipotle Seasoning

Directions

In a medium saucepan heat oil (about 45 seconds, not too hot!!), add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Warm Chicken broth in the microwave, about 3 minutes. Add stock. *Note - The reaction is quite surprising and will pop and sizzle, be careful!

Add chili powder and tomato puree, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.
