Ingredients

1 small roast beef
1 or 2 cans of green beans
Box instant mashed potatoes or homemade
Salt and pepper
Corn starch
Other seasonings you're choice (optional)
Tips
I sometimes put butter and seasoning salt on the green beans. I use a no carb butter. And I believe per can of green beans is 1/2 cup is 4 grams of carbs for those who are diabetic. And the roast cooked 1 serving is about 3 grams of carbs. The only thing high is the mashed potatoes which you can substitute that out. I used a box of hungry jack and it said there was 19 grams in it.
Directions
Put meat in crock pot. Fill with water till half the meat is covered in water. Add salt, pepper and desired seasonings. Put on high and wait 6 hours. After 6 hours leave it on but take out the juice and put in a pot to make gravy out of it. About 4 cups of juice. Put leave one cup out at first and put in a bowl.
Add 8 tbs corn starch to the one cup and mix till dissolved and add to remaining 3 cups. Leave on medium and did continously.
Put the can(s) in microwave for one minute. Take meat out. Cut it up. It should just fall apart. Serve enjoy.
