    1 Swai fish fillet (Walmart brand or other white fish)
    2 6" corn tortillas
    1 Roma tomato, chopped
    1.5 C Romaine salad (with carrots & cabbage), shredded into narrow strips
    1 container 100-cal spicy guacamole


I use Chef Paul Prudhomme's Fish Magic as my seasoning. It's slightly spicy and creates a nice, dark crust on the fish.
I like spicy food, so I use spicy guacamole, but it would be delicious with regular, or with a remoulade made with Greek yogurt.
These would also be delicious with cabbage slaw instead of salad.
White corn tortillas can be substituted for yellow corn if you prefer.

Season fish fillet as desired (see tips). Cook over low heat in nonstick pan until done through. Spread half the guacamole on each tortilla. Add half the tomato and salad to each tortilla. Place half the fish on top of each tortilla.


Serving Size: Makes 1 serving of 2 stuffed tacos
