Introduction
This is a great sauce that my boyfriend and I developed through some trail and error. The fat-free yogurt adds protein and a nice tangy-ness while the Marscapone cheese adds a wonderful richness. If you're really worried about the calories and/or fat, you could use only Greek yogurt, but I think you'll loose the amazing texture one typically expects in a tzatiki. We use it for a sandwich spread or dip for crudites, pita breads, or even corn chips. This is a great sauce that my boyfriend and I developed through some trail and error. Ingredients
-
8 oz Mascarpone cheese
10.6 oz fat-free plain Greek yogurt
1 large cucumber peeled, seeded, and shredded
1 lemon zested and juiced
salt and black pepper to taste
minced garlic to taste (for my calorie calculations I used 3 cloves, although the calories will not vary much if you use more or less)
Directions
-peel, seed, and shred the cucumber
-place the shredded cucumber in a mine mesh sieve or a colander linked with cheese cloth, paper towels, coffee filters (whatever you have:).
-once the liquid has been drained off, place cucumber in a bowl
-zest and juice the lemon into the bowl
-add Marscapone and Greek yogurt
-mince garlic and add to bowl
-blend all ingredients
-add salt and pepper to taste
-tzatziki in the refrigerator and chill for at least one hour
