Ingredients

    1 lb lean ground beef
    1 28 oz can tomatoes
    1 19 oz can black beans
    2 big green peppers (300g)
    2 small onions (250g)
    package of HOT chili seasoning

Directions

Brown beef, drain fat. Chop up onions and peppers. Open cans of tomatoes and beans. Place all of this in a pot, along with the packet of seasoning. Stir, cover, simmer until vegetables are soft.

Garnish with cilantro/coriander, light sour cream and Cholula (if you like it somewhat spicy).

You can eat it the same day, but it's always better after it's "aged" a bit...Plus, it'll thicken up..

If you're not in 'major diet mode', this goes well with a nice hunk of cornbread, but I also like to take it to work, put it over salad, and top it all off with salsa.

makes approximately 7 cups..
