Ingredients

    8 Tbsp sour cream
    2 Tbsp baking soda
    3 cups (appx 4 large) mashed banana
    1.5 cup sugar
    1/4 cup greek yogurt
    1 10 oz (283 g) Dark chocolate chips
    3 cups whole wheat flour
    4 large eggs
    1tbsp vanilla extract

Tips

Original family recipe calls for 3 c sugar & 1 c butter as well as using white AP flour for all 3 cups. Butter & sugar reduced, whole wheat flour used to increase nutrition content.


Directions

Preheat oven to 350. Combine baking soda & sour cream in small bowl, set aside. Cream butter & sugar in large bowl until light & fluffy, add greek yogurt, mashed bananas, eggs & vanilla extract, beat until well combined. Add sour cream mixture & whole wheat flour, alternate until both are well combined with banana mixture, careful not to over mix. Stir in Dark chocolate chips. Grease muffin tin or use muffin cups in tin & bake at 350 until golden brown & top springs back when touched, no set time as individual ovens may vary.

Serving Size: makes 32 standard size muffins or 24 standard & 24 mini muffins
