Ingredients

    1 head of cauliflower (steamed)
    1 large Japanese yam (roasted with avocado oil, salt and pepper)
    5 radishes
    2 stalks of celery
    1 large carrot (shredded)

Tips

Use as a filling for a raw collard green wrap. Use a few chives to keep the roll tied up.


Directions

While cauliflower is steaming, roast Japanese yam in oven for about 20-30 minutes (cut it into 1 inch pucks, rub pucks with avocado oil, sprinkle with salt and pepper)
Process the steamed cauliflower florets in cuisine art, then mix in cut up yams by hand. Stir in remaining ingredients.
