Ingredients
-
1 cup Chocolate Brown Rice Protein Powder (I used Jarrow Formulas)
3/4 cup PB2 Powdered Peanut Butter
1 cup oat flour (I used Bob's Red Mill)
14 packets Truvia
1 - 1 1/3 cups Almond Coconut Milk
1/4 cup Enjoy Life Mini Chips
Tips
You can make your own oat flour by processing oats in a food processor until fine. I also tried this recipe using pea protein, but I like the taste of the brown rice protein better.
Directions
Grease an 8 inch square pan using a very small amount of coconut oil.
Add brown rice powder, PB2, oat flour and Truvia to a medium sized bowl. Stir until well combined. Add 1 cup of almond coconut milk, stirring well. Add more milk as needed to get a nice, thick ball of dough. Add chocolate chips and stir well.
Place dough into prepared pan and flatten with spatula or a piece of wax paper. Cover and refrigerate at least 8 hours.
Cut into 10 bars. Wrap individual bars with wax paper and store in refrigerator.
Serving Size: 10 bars
Number of Servings: 10
