Introduction

This is a change from chicken noodle and to use up left over chicken or turkey. This is a change from chicken noodle and to use up left over chicken or turkey.

Ingredients

    3/4 cup brown rice
    3/4 cup carrots, diced
    3/4 cup celery, diced
    8 cups chicken or turkey broth (homemade is the best tasting)
    1 1/2 Tbsp. minced onion
    2 1/2 cups cooked chicken/turkey cut into bite size pieces
    Dried oregano, to taste
    black pepper, to taste
    garlic powder, to taste

Tips

If you like your soups less brothy, you can add up to another 1/4 cup of rice and it will be thicker. It will change your calorie count.


Directions

Place all ingredients except for the chicken in a 3 qt. pot. Bring to a boil. Reduce heat and simmer until vegetables are about done, about 50-60 minutes. Add chicken and bring back to a boil. Cook until vegetables are done to your liking.
