Introduction

Light Crispy Waffles that are Gluten-Free. I use Lactose-free Milk and Stevia to minimize the sugar as I have issues with Candida Albicans Light Crispy Waffles that are Gluten-Free. I use Lactose-free Milk and Stevia to minimize the sugar as I have issues with Candida Albicans

Ingredients

    2 Eggs, Large
    1 tbsp Zero Calorie Sweetener (Stevia)
    1 tsp Table Salt
    2 tsp Baking Powder
    1 tsp Xanthan Gum
    4 tbsp Melted Butter
    2 cups 2% Lactose-free Milk (Natrel)
    2 cups All Purpose Gluten-free Flour (Robin Hood)

Tips

The Xanthan Gum can be skipped but I find the Waffles become to crisp when you try to re-heat them.


Directions

Preheat Waffle Iron
1. Place Butter into small sauce pan to melt.
2. Crack eggs in large bowl and beat with whip.
3. Combine Salt, Baking Powder, and Flour with eggs.
4. Add Milk and mix well by hand. (Some adjustment may be required)
5. Fold in melted butter.
6. Once Waffle Iron is up to temp, (the light goes off) pour roughly 1 cup of batter into it evenly.
7. Wait for batter to bubble before closing the lid. (light will go back on)
Waffle should be ready when indicator light goes off once again.


Serving Size: Makes 4-5 Waffles
