Ingredients

6 oz Paneer cheese
Dash of Salt
2 Tsp Turmeric
Dash of Cayenne Pepper
1 Tbsp Olive oil for frying
3 Medium Yellow Onions
2 Tbsp Garlic and Ginger paste (~one 2" thumb of ginger and 8 cloves of garlic grated)
2 Tbsp Olive oil for caramelizing
2 Tsp Ground Coriander seeds (Dhania Powder)
2 Tsp Red Chili Powder
2 Tsp Cumin Powder
1 Tbsp Garam Masala
10oz package of frozen chopped spinach
8 oz fresh baby spinach
5 oz fresh baby kale
Tips
Try adding other greens like Chard, arugula and maybe even some herbs like basil.
Directions
In a bowl, mix 1 Tbsp Olive Oil, Salt, Turmeric, and Cayenne pepper. Cut Paneer into cubes and add to bowl and coat with mixture. Empty contents into a hot pan and fry until lightly golden brown.
As the Cheese is frying, finely chop the onions and put your fresh greens into a covered pot on low.
Remove cheese from the pan and add more olive oil. Add in the chopped onions and cook down until translucent and sweet.
Puree the thawed frozen spinach. After the fresh greens are cooked, let them cool before you finely chop them or put them in the food processor. (I like a little variety in the texture of this dish so I puree the frozen spinach and chop my freshly cooked greens,)
After the onions have finished cooking, add Garlic and Ginger paste, Garam Masala as well as the Dhania, Chili, and Cumin Powders. Cook the spices together until aromatic.
Add the greens and simmer for a few more minutes before serving.
