Introduction

I've been on the hunt for a creamy, spicy dip / spread like Desert Pepper Trading Company's Pinto Bean Dip. Swapping in cowpeas for pintos created a buttery, slightly nutty flavour that played perfectly with the spices, vinegar and garlic. Ingredients

    2 cups cooked or canned black eyed peas (cowpeas), drained and rinsed
    2 tbsp medium chunky salsa
    1/2 jalapeno pepper, seeded and minced
    1/2 - 1 tbsp water
    1 1/2 tbsp apple cider vinegar
    1 clove garlic, minced
    1/2 tsp salt
    1/4 tsp cumin
    1/4 tsp paprika
    1/4 tsp onion powder
    1/4 tsp ancho chili powder
    1 tsp sugar or substitute (I used stevia)

Directions

Combine all ingredients in a food processor and puree until smooth and thick.
Adjust seasoning to taste and serve.
Keeps covered in the fridge up to 1 week.

Serving Size: Makes ~ 2 1/4 cups, about 9 servings
