Ingredients

    2 lb. small red potatoes
    1 hard-boiled, peeled, large egg
    1/2 medium yellow onion, chopped
    1 + 1/2 large stalks celery, chopped
    1 tbsp dill relish, drained
    2 tbsp sweet relish,drained
    7 tbsp light mayonnaise
    1/4 tsp black pepper
    1/2 tsp sea salt

Tips

Potato salad can be eaten warm or cold, but leftovers must be refrigerated.


Directions

Boil potatoes until tender. Drain and let cool.
Chop egg and set aside. Peel potatoes and chop into bite-size pieces. Mix all ingredients except salt in large bowl. Add salt to taste.
