Introduction

A quick and easy low-carb solution for sandwiches. I cut it into small squares and put it in a Ziploc in the fridge so it lasts a while, but you could probably even freeze it and pull out a serving as needed. Ingredients

    1.5 cups flaxmeal
    2 Eggs
    1 tsp Baking Powder
    1/2 tsp Salt
    2 packets of Splenda
    4 TBS Extra Virgin Olive Oil

Directions

Spread your batter out on parchment in a very thin layer to approximately an 8x10 size (I like even bigger to get a nice thin piece). Bake at 425 for about 10 minutes.

Serving Size: makes one 8x10 flatbread, cut into small squares and use as bread for mini sandwiches or toast and enjoy with hummus or a bit of butter/nut butter as a snack
