Introduction

This is a healthy alternative to creamy carrot soup which fills you up and tastes healthy! This is a healthy alternative to creamy carrot soup which fills you up and tastes healthy!
Number of Servings: 1

Ingredients

    2 carrots, about 7-10 inches log
    Boiling water (enough to cover the carrots)
    1/2 teaspoon sugar
    1 teaspoon Fresh Dill for garnish
    1/2 tablespoon Butter
    Salt and Pepper to taste

Directions

Makes 1 large bowl of soup

1. Peel and chop up the carrots into rounds. It doesn't matter how big, just as long as you can strain them once they are cooked.

2. Place carrots in a pot and cover with boiling water. Cook for approximately 15 minutes, depending on how soft you like your carrots. But don't cook them so much that they turn to mush in the pot.

3. Strain Carrots (and reserve some of the liquid)

4. Place carrots into food processor or blender with some of the liquid if needed. Add sugar, dill, salt, pepper, and blend to a creamy consistency.

5. Pour into bowl and drop in the butter. Enjoy!
