Introduction

This is a one pan dish that the whole family can love. It can be changed up by adding sauteed veggies, hotter curry, different fish, etc... This is a one pan dish that the whole family can love. It can be changed up by adding sauteed veggies, hotter curry, different fish, etc...

Ingredients

    3.5 C. cooked brown rice
    360 grams of fish, cubed
    2 T curry powder
    2 T olive oil
    1 small yellow onion, chopped
    1/4 C. chopped green onion

Directions

Prepare brown rice and set aside. Heat up olive oil in large pan, cook chopped onion until translucent. Add fish and Curry powder. Stir often until fish is cooked through. Add cooked brown rice and stir until completely incorporated. Serve with a Tblsp or so of green onion on top.

Serving Size: makes 5 1.5 cup servings.
