Ingredients

    1/2 cup sugar
    1/2 cup flour
    1 tsp. baking powder
    1/2 cup skim (nonfat) milk
    1/2 stick butter
    1 cup fruit (e.g. apples, blueberries, peaches, applesauce)
    4 Tbsp. Fat Free Cool Whip

Tips

Add sugar or sweetener to fruit if it is too tart. I also season apples and peaches with spices, e.g., cinnamon, nutmeg, cloves. Can use fresh, frozen (thawed) or canned fruit.


Directions

Heat oven to 450 degrees. Melt butter in a small casserole dish in the oven (I use a medium sized square or round Corning Ware dish). While butter is melting, combine sugar, flour and baking powder. Add milk and stir well to make a batter. When butter is melted and sizzling, pour batter into the dish, then add the fruit at the center of the batter and spread it slightly toward the sides of the dish. (The batter will partly cover the fruit.) Bake 20-30 minutes, until batter is done and lightly browned. Serve warm topped with whipped topping, whipped cream or vanilla ice cream.
