Ingredients

1 large zucchini cut in 1/8-1/4 slices
1/3 cup breadcrumbs
1/4 cup reduced fat grated parmesan cheese
1/4 tsp black pepper
salt to taste
1/8 tsp garlic powder
1/8 tsp cayenne pepper
3 tbsp low-fat milk
Tips
May have to press crumbs onto zucchini slices to ensure they stick.
Chips will get crispier while cooling.
Directions
Preheat oven to 425 degrees.
Combine breadcrumbs, cheese, pepper, salt, garlic powder and cayenne pepper. Dip zucchini slices into milk and dredfe into breadcrumbs to coat both sides. Arrange on non-stick cookie sheet and lightly mist with cooking spray. Bake 15 min, turn over and bake until golden, approx 15 minutes. Allow to cool and store in airtight container.
