Introduction

This is a delicious low cal version of a high fat, high calorie classic. My kids love it and don't know they are eating veggies. Ingredients

    1 T extra virgin olive oil
    3 cloves garlic
    16 oz frozen cauliflower
    1 can veggie broth
    4 oz freshly grated Parmesan cheese
    4 oz fat free cream cheese
    1 cup chopped onion
    1/3 c skim milk

Tips

Serve with pasta, chicken, and steamed veggies for a very filling pasta primavera!


Directions

Heat oil in a sauce pan and add garlic and onions. Saute until starting to brown. Add veggie stock and cauliflower. Boil for 20 minutes until cauliflower is very tender. Use immersion blender or food processor to puree the mixture. Add additional ingredients to food processor and pulse until smooth, adding more milk to thin if necessary.
