Introduction

This soup is quick and easy to make and you can substitute any veggies you have on hand. This soup is quick and easy to make and you can substitute any veggies you have on hand.
Number of Servings: 5

Ingredients

    2 Tbsp butter
    1 Large onion
    4 Chicken breasts
    6 cloves of garlic
    6 cups of vegetables (diced tomatoes, spinach, mushrooms etc)
    6 cups of chicken broth
    Juice of 1 small lemon
    Season to taste (I use Pepper, Cilantro and Cumin)

Directions

Saute onion in butter until soft. Add chicken, cooking for about 5 minutes. Stir in vegatables, chicken broth and lemon juice. Bring to a boil, cover and simmer for about 15 minutes.
