Introduction

Lots of vegetables and lots of seasoning makes it taste much more fattening than it really is. Serve over pasta, as a dip, on pizza or your favorite chicken or turkey parmesan dish. Ingredients

    25 Baby Carrots, Grated
    1/4 cup Sweet Onion, Grated
    1 jar Roasted Red Peppers packed in water
    2 tbsp Basil
    2 tbsp Italian Seasoning
    2 tbsp Mrs. Dash Garlic and Herb Seasoning
    1/2 tsp. Crushed Red Pepper Flakes (optional)
    4 tbsp Roasted Garlic Tomato Paste
    1/4 tsp Sugar (optional)
    1 tsp White Pepper
    1 cup Water (can adjust to make sauce desired thickness)

Tips

You can add additional vegetables either before you puree the sauce if you want to hide them, or add chopped kale or spinach 10 to 15 minutes before serving.


Directions

In a large saucepan combine Carrots, Onion and entire jar of Roasted Red Peppers. Bring to a simmer and let cook approximately 15 to 20 minutes until carrots are soft.

Remove from heat and puree with immersion blender, food processor or blender. Return to saucepan and return to a simmer and add Tomato Paste, Basil, Italian Seasoning, Mrs. Dash, Red Pepper Flakes, Sugar and White Pepper. Add desired amount of water to create a slightly thick sauce consistency, remember you can add more water later if it is too thick for your taste.

Let simmer for at least one hour, and make sure you cover the pot it will make a mess. Stir occasionally to make sure it is not sticking and add more water as desired.

Seasoning can be adjusted to your taste as well, I like more garlic and basil, you might not.

Serve hot over pasta or any other dish that calls for a rich tomato sauce. If using for pizza, remember not to thin too much.
