Ingredients

    1 cup uncooked brown rice
    1 cup whole kernel corn, drained
    salt and pepper
    1 cup tomato sauce
    1⁄2 cup water
    1/2 cup chopped onions
    1/2 cup green bell pepper, seeded and chopped
    1 lb lean ground beef, uncooked broken up into small pieces (do not pre-cook it will cook in the casserole dish, see recipe tips for seasoning)
    14 1/2 ounce can diced tomatoes (undrained)
    6 slices uncooked bacon, cut in half
    2 cups shredded cheddar cheese

Tips

Season the ground beef with seasoned salt, black pepper, and garlic powder


Directions

1. Set oven to 450 degrees F.

2. Butter a 2 qt casserole dish.

3. Layer each ingredient in order given starting with the uncooked rice on the bottom of casserole dish, ending up with the bacon on top (save the cheese for the last 10 minutes of baking).

4. Cover, bake for 1 hour; uncover and continue cooking for 20-25 minutes longer.

5. Top with shredded cheddar cheese the last 5 minutes of baking.
