Introduction

Ingredients

    1/2 large onion, thinly sliced
    1tbsp unsalted butter (margarine)
    2 pounds sauerkraut, rinsed and drained
    1 Gala, Fuji or Red Delicious apple, thinly sliced
    1/2 c. dry white wine
    1 tbsp packed dark brown sugar

Directions

Cook onion in butter in a heavy pot over medium-high heat, stirring occasionally, until golden, about 6 minutes. Stir in sauerkraut, apples, and wine and bring to a simmer.

Cover pot and reduce heat, then simmer, stirring occasionally, until sauerkraut is very tender, about 2 hours.

Stir in 1 tbsp brown sugar and 1/4 tsp each of salt and pepper. Add more brown sugar, salt, and pepper to taste.
