Get the lowest calorie Panko bread crumbs that you can and also get them ground so you don't have to pulse them with processor if possible.
Directions
Heat the olive oil in a large 12 inch saute pan. Med heat. Add onion & celery, cook 5 - 7 mins, stirring occasionally, until onion is translucent, not browned. Set aside.
Place meats, parsley, thyme, chives, eggs, milk, salt & pepper in large mixing bowl. Put the panko in food precessor fitted with steel blade and process until finely ground. Add onion mix and the panko to meat mix. Gently toss the mix, until combined, but not compacted.
Oven temp: 350'
Place a parchment paper on sheet pan. Pat the meat into a flat rectangle and press the sides together until it forms a cylinder down the middle. This will ensure no air pockets. Bake for 40 to 50 minutes, until meat thermometer reads 155 to 160. Remove from oven and allow to rest for 10 mins.
