Ingredients

2 Cups ground oats
1 cup oatmeal
1/2 C. Honey
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 1/2 C. Nonfat Honey Yogurt, I use Nancys
2 Eggs
4 T. Canola Oil
1 t. Vanilla Extract
1 C. Raisins, 1 cup (not packed)
1/2 C. Pineapple Tidbits
Tips
I grind my own oats to use for a flour substitute.
Directions
Instructions
1. Heat oven to 350°.
2. Coat muffin tin with cooking spray or liners.
3. Combine oat flour, oats, baking powder, baking soda and salt in a bowl.
4. Combine yogurt, honey, eggs, oil, and vanilla in a second bowl.
5. Fold yogurt mixture into dry mixture; stir to combine completely.
6. Add Raisins and Pineapple.
7. Spoon into muffin tins (don't be afraid to fill them full).
8. Bake until top is golden and springs back when you gently touch it, 20-25 minutes.
