Introduction

Low on sodium but full on taste! Low on sodium but full on taste!
Number of Servings: 10

Ingredients

    2 pounds ground turkey
    1 pound fresh mushrooms, sliced
    ˝ large onion, chopped
    5 cloves garlic, minced
    1 tablespoon olive oil (OMIT for this challenge!)
    2 cans (29 ounces each) tomato puree
    1 can diced tomatoes with basil, oregano, and garlic (no salt, drained)
    2 ˝ cups water
    2 bay leaves
    2 tablespoons dried oregano
    2 tablespoons dried basil
    1/2 teaspoon dried rosemary, crushed
    1/4 to 1/2 teaspoon crushed red pepper flakes
    1/2 cup chopped fresh parsley
    ˝ tsp salt (optional)
    2 cups chopped spinach
    3 tablespoons Splenda, TruVia, or whatever you prefer (I used 6 packets from a coffee shop)

Tips

The first time I made this I forgot the water and it came out super thick and chunky...just the way I like it!


Directions

Brown ground turkey in a skillet and set aside. Sauté mushrooms, peppers, onion, and garlic in oil until softened. Add all spices, stirring to distribute as you continue to sauté. Add puree and diced tomatoes and then stir in browned ground turkey.

Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 hours.

Stir in parsley and sugar substitue. Discard bay leaves before serving.
