Ingredients

12 ounces Fiber Gourmet rotini
1/3 cup honey
1/2 cup cider vinegar
2T olive oil for sauce, 1T olive oil for cooking chicken
2T lemon juice
2T packed brown sugar
1T smoked paprika
salt & pepper to taste
cayenne pepper (optional and to taste)
1.25 pounds boneless skinless chicken breast, diced into bite-sized pieces
2 cups fresh baby spinach leaves, chiffonade
1 red bell pepper, diced
1 yellow bell pepper, diced
Directions
Cook pasta according to package directions. Set aside.
To a medium bowl add honey, vinegar, 2T olive oil, lemon juice, brown sugar, smoked paprik, salt, pepper, and stir to combine.
Cook chicken in 1T olive oil over medium high heat for 5 minutes, stirring as needed. Carefully add the sauce and allow to bubble for 3-4 minutes or until chicken is cooked through.
Add spinach, peppers, chicken and all the sauce to the bowl of pasta and stir well to combine. Taste for seasoning and serve either warm or cold.
