Ingredients

    1 bag shredded cabbage & carrots, 14oz
    1 red pepper shredded or chopped fine
    1 bunch chopped scallions
    1 bag shelled edamame, 8oz
    1/3 cup sunflower seeds
    1/2 cup (or to taste) fresh cilantro
    1/2 packet Hidden Valley Ranch seasoning
    1 lime, juice plus zest
    1/3 cup light mayo
    1/3 cup light sour cream
    10 teaspoons (or to taste) Sriracha sauce
    1 Tablespoon sugar
    salt
    pepper

Tips

You can always add more salt, cilantro or sriracha without changing the calorie count much, so start with less and add more after tasting the final product.


Directions

in a large bowl add lime and lime zest, sugar, ranch seasoning, salt, pepper and sriracha to mayo and sour cream and mix thoroughly. Add all remaining ingredients and mix well.

Serving Size: makes about 11 servings of 1 cup each
