Ingredients

    1 tsp coconut oil
    1/2 medium sized yellow onion
    2 average sized bell peppers (any color)
    12 oz baby spinach
    6 large eggs
    1/4 cup skim milk
    1/4 cup reduced fat mexican cheese blend

Tips

Can be refrigerated and reheated for about 30 seconds in the microwave.


Directions

Preheat oven to 350 degrees Fahrenheit. Add coconut oil to large frying pan and heat on medium. Add diced onion and cook until translucent. Add chopped bell peppers and cook until tender. Add baby spinach and cook, stirring, until all the spinach is cooked down. In a large mixing bowl: add veggie mix, eggs, cheese, and skim milk; whisk until well mixed. Fill 12-count muffin pan with egg mixture (filling each cup until the edge). Bake for 30 minutes. Check with knife or toothpick to confirm the eggs are thoroughly cooked (if not additional time is required based on the runny-ness). Enjoy!
