Introduction

This is a soup that I eat as a side with my meals or for a filling snack. This is a soup that I eat as a side with my meals or for a filling snack.
Number of Servings: 8

Ingredients

    1 cup sweet corn
    1 cup sliced carrots
    1 cup cubed or sliced zucchini
    1 cup cubed potato
    4 cups water
    1 extra large bouillon cube or 2 regular cubes

Directions

Chop vegetables in 1/2" cubes, or whatever size you prefer
Alternately, you could use canned vegetables
Bring water to a boil
Dissolve bouillon cube in water
Add all other ingredients
Simmer for 20 minutes

Serving Size: Makes 8 1-cup servings
