    1 pound (16 punces) Simple Truth Ground Turkey
    1/4 cup raw onion, roughly cut.
    1 egg, raw
    Pizza spice blend from Well-Fed (page 49) plus 3/4 fennel seed
    3 Pepper & Onion Blend, Kroger (frozen) -2 cups, thawed
    Mushrooms, fresh, 4 large
    Raw Sharp Cheddar Cheese, 8 oz, thinly sliced
    *Muir Glen Organic Pizza Sauce,
    Coconut Oil, 1 tbsp


In food processor with blade, process turkey, 1/4 cup onion, egg & spices. Melt 1 Tbsp. coconut oil into 10 inch oven proof skillet, tip to coat well. Press turkey mixture evenly over bottom of skillet. Bake at 375 degrees for 10 - 12 minutes, until just set but still "wet" in appearance.
Top evenly with 1/2 cup pizza sauce. Layer mushrooms and pepper-onion blend over sauce. Top with thinly sliced raw cheddar. Bake at 400 degrees until hot, bubbly, and cheese is golden-brown and as "crisp" as desired.
Cut into 8 wedges and serve. REALLY juicy!
