Introduction

Eggs & egg whites baked in a muffin tin with turkey sausage, sauteed onions, mushrooms, and tomato. Some had ricotta cheese or cream cheese or cheddar cheese. Ingredients

    5 Eggs
    Egg whites equivalent to 3 eggs per package
    4 Turkey Sausage Patties, Butterball
    3 Baby Bella Mushrooms
    1/3 Sweet Onion
    1/3 Skinless, Seedless Tomato
    Since there were 12 muffins I added different cheeses to each "muffin" including: fat free cream cheese, fat free cheddar cheese, The Laughing Cow Garlic and Herb 3/4 of a wedge, and part skim Ricotta
    Salt and Pepper

Tips

I've seen similar recipes that say bake 12-15 minutes but mine took about 20-25 minutes, I just had to keep checking them every few minutes since it was my first time. Add whatever ingredients you want and top with eggs, they're delicious, low carb, and packed with protein!


Directions

Place turkey sausage, mushrooms, onions, tomato, and cheese in the bottom of a muffin (or cupcake) tin (I used the regular size that makes 12 in a batch.) Mix eggs and egg whites and S&P and pour over ingredients. Bake at 350 15-20 minutes until spongy and golden on top (or to your preference.)

Serving Size: Makes 12 "muffins" about 1/4 cup each
