Ingredients

    1 mashed banana
    Cinnamon to taste
    Vanilla extract to taste
    1 egg
    3 tbsp flour
    3 tsp sugar
    Pinch of baking soda
    About 10 almonds chopped. (or walnuts, pecans, whatever kind you want. Or none)

Tips

Add chocolate chips, blueberries, or any other toppings you want.
For a fluffier pancake add more flour.
Its best to make small pancakes if the batter is thin.
Mine were sweet and moist without syrup or honey. But drizzle if you want


Directions

Mix mashed banana, cinnamon, vanilla, and egg. Add in flour 1 tbsp at a time. You may need more or less depending on where you live, ripeness of banana, etc. Doesn't have to be exact. Stir in sugar. Again, use more or less depending on ripeness of banana. Stir in baking soda and chopped nuts. Pour about half the batter on a hot, oiled skillet. Cook over medium low, flipping once the bottom is browned.
